Indian-spiced Chicken Burgers

Welcome back to my “Food for Runners” series! I decided to start the series because my fiancé is going to run the Rome Marathon in March and asked me for light but nutritious meals to support his training schedule. The recipes are healthy and easy to make, so they can be followed by anyone. As my first recipe of the series I am sharing these easy to make, chicken burger.

Indian Chicken Burgers recipe

Ingredients

  • 400g chicken mince
  • 2.5 inches of fresh ginger, peeled and grated
  • 3 garlic cloves, chopped
  • 1/2 small onion, chopped
  • large handful fresh coriander leaves (optional), finely chopped
  • 1 tsp salt
  • 3⁄4 tsp garam masala
  • 1 1⁄2 slices of bread, crumbed
  • 1 egg
  • 1 tsp ground cumin powder
  • 1 tsp lemon juice
  • 2 green chillies, de-seeded and chopped
  • 1 tbsp vegetable oil

Indian Chicken Burgers recipe

Preparation

Mix together all the ingredients for the burgers (I used my hands but regretted it soon after they started burning from the chilli!).

Allow the mixture to rest for 10-15′ in the fridge. Pre-heat the oven to 200°C.

Mould the mince into four burgers and place in the oven on a baking sheet. Cook for 20 minutes, turning halfway through.

Serve with rocket or lettuce salad, tomatoes, mustard and a slice of cheese.

This is one healthy burger! I love it! I love how you made it Indian style with ginger and other spice!

Great idea! I make something very similar for my boyfriend to take into work for lunch each day – he’s protein (and fitness) obsessed!

He is vegetarian, but every now and then he eats chicken to get the proteins! ;)
